Recipe: Crunchy Peanut Butter Energy Balls

For your busy, on the go weeks, prep a batch of these fun and tasty little balls of quick energy. They're also great before or after a workout.

Yields: 8 balls | Total time: 10 minutes

  • 1/2 cup natural unsalted crunchy peanut butter (or sub other nut or seed butter of choice)
  • 2 tsp pure maple syrup
  • Dash sea salt
  • 1 tsp chia seeds
  • 1 tbsp raw, unsalted pepitas (pumpkin seeds)
  • 1 tbsp raw, unsalted sunflower seeds
  • 1-2 tsp dairy free mini chocolate chips (I use Enjoy Life brand)
  • 1 tsp unsweetened cocoa powder
  • 2 tbsp millet flour

Begin by combining the peanut butter, maple syrup and salt. Then add all the seeds and chocolate chips until well mixed. Finally add in the cocoa powder and millet flour and fold together until they're mixed in well. It will create a thick and sticky dough, which you'll then roll into 8 balls using your hands. Store in the fridge for up to a week. Enjoy!
